Here is an easy way to make curry out of jackfruit seeds

It is safe to say that jackfruit (Fene) is comparatively the cheapest fruit on the market in Uganda. It is probably the only fruit that a farmer will be willing to offer you for free. And in some parts of Uganda like Buganda and Busoga, jackfruit is plentiful everywhere.

Fene seeds curry

Loved mostly by children for it's sweet, meaty yellow or red pods, Fene is a backstreet fruit that most Ugandans wouldn't be caught serving to a serious visitor, which is why it is the only fruit that won't be included in a man's gifts when he goes to be introduced to the parents of his fiancée. In that way, it is a bit despised for God knows what.

However, that doesn't make Fene any less of an amazing fruit that many people swear by. Surprisingly, even the biggest jackfruit connoisseurs in Uganda only eat it's fleshy pods and throw away the seeds. But things are about to change.

We are about to learn how to make a curry out of these huge seeds that are not only plentiful but free for grabs.

For the uninitiated, a curry is a dish of meat or vegetables that is cooked in a sauce of hot-tasting spices and typically served with rice.

You only need the following 9 ingredients along with some oil and some salt and pepper:

  1. onion,
  2. garlic,
  3. ginger,
  4. water,
  5. tomato paste,
  6. coconut milk,
  7. garam masala,
  8. jackfruit seeds,
  9. fresh spinach

Place the jackfruit seeds in a pan, add enough water into the pan to cover the seeds.

Place the pan over high heat and bring to a boil.

Lower heat to medium and simmer for 25-30 minutes.

Remove from heat.

Let the jackfruit seeds cool, and when they are cool enough to handle, pat them dry and slowly peel off the outer white covering.

  1. Then, add the olive oil to a pan and add the onion to it. Let the onion sauté (fry quickly in the pan) for about 10 minutes, stirring often.
  2. Add in the garlic, ginger, cooked and peeled jackfruit seeds, water, tomato paste, and curry powder and mix well and let simmer uncovered for about 10 minutes, over medium / low heat.
  3. Then add in the coconut milk and spinach, and gently stir until spinach is wilted.
  4. Season with salt and pepper and remove from the stovetop.
  5. Enjoy this Jackfruit Seed Curry with rice.

Serve with rice.
