Here's a simple recipe for dairy-free coconut banana ice cream:

Ingredients:

  • 4 ripe bananas, peeled and sliced
  • 1 can (14 ounces) full-fat coconut milk
  • 1/4 cup maple syrup or honey (adjust to taste)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

Freeze the bananas:

  • Slice the ripe bananas and place them on a parchment-lined tray or plate.
  • Freeze the banana slices for at least 2-3 hours or until they are completely frozen.

Blend ingredients:

  • In a blender or food processor, combine the frozen banana slices, coconut milk, maple syrup (or honey), vanilla extract, and a pinch of salt.
  • Blend the ingredients until smooth and creamy. You may need to stop and scrape down the sides of the blender or food processor to ensure everything is well combined.

  • Taste the mixture and adjust the sweetness if needed by adding more maple syrup or honey. Blend again to combine.

Chill:
