How to make a tasty cheesy potato soup for a cold day indoors

This is for those of us that love everything cheese. This homemade cheesy potato soup is comfort food at its best. That is another way of saying that it's not the healthiest, but heck, is it delicious!

Cheesy Potato Soup

Without wasting anyone's time, here goes:

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 6 medium Irish potatoes, peeled and cubed
  • 5 cups water
  • 2 cups 2% milk
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon pepper
  • Minced fresh parsley

Just a few easy steps are all it takes to make this tasty recipe:

  1. Cut your Irish potatoes into tiny pieces no larger than three quarters of an inch and try to keep them around the same size so that they cook at the same time. 
  2. Simmer potatoes in broth until tender.
  3. While potatoes are simmering cook butter and flour. Add milk and cook until thick and bubbly. Whisk in cheese.
  4. To make this soup nice and creamy, puree half of the cooked Irish potatoes either by using an immersion blender or by transferring a portion of the soup to a blender, pureeing, and then stirring the pureed soup back into the pot. 
  5. Add bacon into the mix.
  6. Add chili powder of choice to give the soup the most perfect depth of flavor. Add the chill as you taste.
  7. Garnish and enjoy. Not the healthiest, but totally worth it.

Note: The soup can be used in the preparation of a special matoke stew (katogo) as well for that special someone. Cook the matoke till they are done and drop them in this soup and cook for about ten minutes at low heat so that the flavours merge.

Great for a cold day in bed with your significant other.
