Are you tired of eating mandazis, chapatis, and pancakes every day for breakfast? You can try something different and healthier. Something that is completely gluten-free and so you won’t have to deal with fatigue and other side effects that come with over-consumption of gluten (the protein found in grains like wheat).

Kui’s Kitchen shared with us a simple recipe on how to make the perfect gluten-free bread.

Ingredients

1 ¼ cup brown rice flour (just mill your brown rice using a blender)

½ cup millet flour

½ cup red and white sorghum flour

1 cup plain yogurt

½ cup flax

1 teaspoonful vanilla

¼ teaspoonful cinnamon (optional)

1 ½ teaspoonful baking powder

Assorted seeds and nuts of your choice

2 tablespoonfuls organic honey

Procedure

Start by making the flax egg. To make the flax egg, mix 1 tablespoonful of flaxseeds with ½ cup of water then let it sit for 30 minutes.

When the flax egg is ready, blend it until fine.

Measure the rest of the ingredients in a bowl and mix the dry one in a separate bowl.

Mix the flax egg with the wet ingredients and whisk until properly mixed. Now add the flour then fold in the seeds.

Once the batter is ready, pour it in the baking tin and top with some nuts and sesame seeds.

Bake for 45 minutes at 170 degrees.

Check if it’s ready with a toothpick.

When ready, let it cool and serve with a cup of good tea.
