Ingredients
350g fish fillet. Alternatively, you can work with whole fish and cut it into big slices.
1 big onion (diced)
4 cloves of garlic – either grated or you can use a garlic press
4 big ripe tomatoes
1 piece of ginger (grated)
White pepper
Coriander (dhania)
Fish masala
Cooking oil
Cayenne pepper for that extra hotness (optional)
Procedure
Cut your fillet into big pieces, season it with salt and white pepper. Let it sit for a few mins.
In a pan, heat the oil add the diced onions and saute for a few minutes.
Add the ginger and garlic and let it cook for a minute or so. Make sure the onions don’t get burned.
Now add fish masala and let it cook for a few seconds.
Blend your tomatoes and you can also add some water.
Add the blended tomatoes to the pan, leave them to simmer for a few minutes then add the fish fillet.
Cover and turn on medium heat. Let it cook for about 8-10 mins.
Taste to make sure your seasoning is okay.
When it’s well cooked, sprinkle the coriander for garnish.
Now serve your fish curry with vegetable rice. Alternatively, you can serve with ugali or even chapati.
